  • Scorzonera: nicknamed black salsify, scorzonera belongs to the same family as the latter (Asteraceae). Recognizable by its black or brown skin, it offers white flesh with a taste similar to salsify, although more pronounced. Its straighter and longer roots make it an even more productive and easy to prepare vegetable.

March marks the end of the citrus season, although you may still find grapefruit or tangerines on market stalls. While there are no orchard fruits to harvest this month, you can still make delicious desserts with produce from your garden and vegetable patch.

  • Rhubarb : although it is botanically considered a vegetable plant, rhubarb is treated like a fruit on our plates. In regions with a mild climate, and provided you have planted your rhubarb at the beginning of autumn, you can enjoy its sweet and tangy tasting stalks from March onwards, delicious in pies and compotes!
  • The fruits of the Ebbing chalef : appreciated for its evergreen foliage, the Elaeagnus ebbingei , or Ebbing chalef, is an ornamental shrub generally used to create garden hedges. Its autumn flowering, melliferous and fragrant, gives way in winter to small ovoid fruits which ripen until spring. If you live in a region where winters are mild, you can enjoy these fruits from March in jellies or jams.
