Even in the depths of winter, you can enjoy delicious seasonal vegetables . February brings its share of tasty vegetables, although fruits are still rare.
And according to the February vegetable garden calendar, you can also plant onions, shallots, spring garlic,rhubarb, red berries and new potatoes if you live in a mild climate.
Vegetables to harvest in February
- Cabbage and its many varieties: the star vegetable of winter, cabbage comes in an infinite number of varieties with different colors and flavors. You have plenty of room to vary your recipes so you never get tired of it! Among the headed cabbages , we can mention red cabbage , ideal for making salads such as coleslaw. White cabbage, just as good raw, can be braised or sautéed, for example, in an Asian wok. Green cabbage, with its embossed leaves, is ideal in soups or stews. To vary the pleasures, you can also harvest cauliflowers during the month of February , which you can prepare in a gratin. Also think about Brussels sprouts , perfectly suited to small vegetable gardens, which offer you tasty little cabbages all winter long;
- Endive: known for being bitter, endive is nonetheless a tasty vegetable, which can reveal delicious sweet notes when prepared in a salad or braised. You will appreciate its flavor even more if you plant it in your vegetable garden! After having pulled them up, remember to force your endives by covering them with soil for at least 15 days before harvesting them. This is the only way to obtain very white and not very bitter endives;
- Lamb’s lettuce: with a fairly short growth, lamb ‘s lettuce can be harvested without interruption between the months of September and April in regions with a mild climate. As it does not keep well, it is better to harvest it according to needs to appreciate all its flavor. It is very easy to grow, which makes it the ideal plant for beginner gardeners;
- Leek: in the leek family , we distinguish the summer, autumn and winter varieties, which are harvested until spring. It is also the leeks that generally have the longest barrels, the famous leek whites, appreciated for their sweet flavor. You can harvest them throughout the month of February to enjoy them in a velouté, fondue or simply with a vinaigrette;
- Jerusalem artichoke: an essential old vegetable, Jerusalem artichoke is harvested between September and March. You can therefore still harvest a few more of this root vegetable in February before the end of its season! Remember to leave a few tubers in the ground to restart your production in the fall. While there are plenty of fruits on market stalls in February, few are harvested at this time. However, you may be able to enjoy some citrus fruits if you live in a region that is not subject to frost, such as the Mediterranean or the Atlantic coast:
- Clementines: February marks the last days of the clementine fruit season. If you live in a region with a mild climate, such as the Côte d’Azur and Corsica, you will be able to harvest your last clementines this month;
- Kumquat: another interesting citrus fruit, the kumquat can be harvested between January and April. Like the clementine tree, it can be grown in a pot on a terrace to be more easily protected from the cold in winter. To appreciate the flavor of this citrus fruit, prepare it as a jam or add it to savory recipes, for example in a tagine or with fish!
